The Sana Smart Breadmaker has two memory chips and its software can be easily updated. This means you can try different programs and save the ones you use the most. Unique stainless steel bread pan and kneaders
The Sana Smart Bread Maker standard model comes with a stainless steel bread pan and stainless steel kneaders. Our bread machine is the only one on the market with a stainless steel pan. The pan includes glass lids which keep moisture in, allow lower baking temperatures, and help keep bread from sticking to the uncoated stainless steel. Kneaders and automatic batch processing
Some bread makers offer folding kneaders or automatic adding of seeds or nuts. The Sana Smart Bread Maker offers a much simpler solution: high-speed kneading. With high-speed kneading, the dough for your bread will be ready in three minutes. After that you can immediately remove the kneaders from the dough, instead of after the bread has been baked. Do you like seeds or nuts spread on top of the bread? Just sprinkle them on the dough after you remove the kneaders.

Multiphase rising
Multiphase rising allows you set two separate rising times and temperatures. One benefit of this is that you can easily prepare homemade yeast. This bread machine is not compatible with US 110v power. A model is in development for the USA. We are hoping it will be ready late next year.
I live in NY, USA and I would love to buy the Sana Smart Bread Maker. While USA/Canada is listed under the "Country of Delivery" drop down menu during checkout, the only option under the "Billing and Shipping" tab is "personal pickup/own transport" (to an address in the Czech Republic) which is not something I can do (I'm sure I'm not the only one). When will shipping to the USA be available?

We are unable to ship to the USA as our products only work on 220v 50hz power and are incompatible with US 110v 60hz power. Also, our shipper (TNT/FedEx) suspended economy international shipping from central Europe, so shipping costs are exorbitant.

The Sana Smart breadmaker isn't compatible with US 110v power. A new model is being developed for the USA and hopefully will be avaialble by the end of the year.
We do not ship to the US, as the rbead maker isn't compatible with US voltage. A new model is in development for the US market which should be available early next year.

The Sana Bread Maker doesn't have specific programs for these items. It is designed for the user to enter and store their own programs according to their favorites recipes. There are 7 slots for programs, and parameters can be adjusted including kneading time and speed, 2 rise times and temperatures, preheat time and temperature, and 3 bake times and temperatures.
We are working on a new model of bread maker which we hope to have ready next year. The interface programming is taking longer than expected. This model will be compatible with North American power.

I have a question about" Important safeguards"
(page 2 of the Instruction manual)
It is said :"Before baking do not forget to cure the heat element inside
the bread maker ... program No4 15mn 180°C ...."
I don't really understand why and
is it absolutely neccessary to do this before each baking ?

The factory puts a temporary coating on the heat element. Curing the heat element just burns off any residue before your first baking. It only needs to be done once, before using the bread machine for the first time.
Is it possible to make bread using yeast? I can't see it in the recipe book.

It operates on 220V power and US is mainly on 110V.
The Sana bread maker only operates on 220V 50 Hz electricity. Most houses in the USA are wired only for 110V 60 Hz. Some customers have ordered it and purchased a step-up voltage transformer in the USA. But we don't recommend it because of the lack of servie centers in the USA, and the high shipping costs.
We have a model in development that we hope to have available early next year in the USA.
Also many reviews mentioned about difficulty in removing the bread even when it cools down. I believe Sana store would have tested this part, any advice to overcome this issue?
If the machine has a defect, we would replace it or refund your money, and we pay for return shipping. We also have a 14-day trial period, where it can be returned for any reason. However in that case the customer is responsible for return shipping, so it might not be too practical from Singapore.
We advise to keep the glass lids on after baking and allowing the loaf to completely cool down. Keeping the glass lids on keeps moisture in the bread (and also allows for lower baking temperatures), which helps in removing the loaf. It really depends on the type of flour used, as some flours like 100% whole grain are naturally stickier than others.
We generally recommend a step-up voltage converter rated at 1500 watts. Australia operates on 230V 50 Hz, same as the Sana Breadmaker. So you would only need a plug adaptor from Australia I type to EU E type.
Unfortunately we don't have a supplier in Australia, but shipping is possible from Sana Store. It's expensive, although VAT taxes of 20% are automatically removed from the price of the product.
Unfortunately this only works with 230V 50 Hz outlets, not US 110V. We are workingon a new model for the US, and hope to have it avaialble by the end of the year.

There are basic programs stored in the machine, but they are generally based on homemade leaven so they would need to be modified. However, you can store your own program, so it would only have to be entered once.
There is a timer. You can set a delayed start for up to ten hours.
You can cook the bread with the blades still in, but it will leave a larger hole in the bottom of the loaf.
The pan doesn't need to be oiled. But the bread must be allowed to fully cool before removing it from the pan for easier removel.
I would like to know if this bread machine can be delivered to France. Also, does it have a gluten free program?

There isn't a pre-programmed setting for gluten-free bread. But it is a fully-programmable machine, so you can set whatever parameters you need into one of the programs. It will store it for you there as a preset program. Typically a gluten-free cycle omits the second rise, so you would just program the mix cycle time (approx 5 minutes), rise time and temperature, and bake time and temperature according to your recipe.
We generally advise against ordering the bread maker for the USA. It operates on European 220V 50 Hz power, and most US kitchens are wired only for 110V 60 Hz. It means you would need an expensive voltage transformer for it to work. Add in the very expensive trans-Atlantic and the lack of any North America service centers, and it gets expensive.
We do have a model in the development stage for the US market. We hope it will be available there in about a year.

You would need a plug adaptor, but the electricity shopuld be fine. We've tested it with 50Hz power, and the only difference is that the kneaders would operate at a slightly different speed.
However, be aware that shipping to Peru from Europe is very expensive, and there are no service centers in South America.

Please send the technical specifications, schematics and the build sheet for this bread maker. As you know we live in the USA and so we need to wire a 220/240 volt outlet to power your unit. We want to install a standard US style 220/240 outlet, so we want to switch the power cord to an American style pigtail. If you do not recommend this we do want to cut off the end of the original pigtail and replace it with an American style plug. Using an adapter seems problematic, in that we are concerned about resistance over time, East Hawaii is very humid, we live in a rain forest. Please ask you tech department about our request and what they think of standardizing the power cord for your bread maker. Thank you in advance for sending us the technical specifications for this bread maker.

We hope to have it ready in 2020. We are working on a new version of the breadmaker which will be compatible with both European and US voltages.
There is no chemical treatment on the stainless steel to make it nonstick. We use lower temperature cooking with special glass lids which reduce contact points with the pan. Also, the loaf is allowed to fully cool before removal, which naturally pulls it away from the pan.

In addition, you would need to purchase an expensive voltage converter as the bread maker operates on EU 230V 50 Hz power. The pan is free from any coatings. It means it can be trickier to release the bread from the pan, but if the glas lids are used and the pan is allowed to thoroughly cool, the bread will release.

It is possible to use it in the United States, but a voltage converter is needed since the bread machine operates at 230 volts and the US uses a 110 volt system. I've heard from some US customers who have adapted their 230 volt outlets (usually found in the laundry room) to accomodate the European "F"-type plug.

While we have sold several bread makers in the US, we generally advise against it mainly due to the reasons you mentioned (power differences, shipping costs, possible warranty issues). We have a model in development designed for the US market and hope to have it available in about a year.
It is possible to pay with a US credit card. Shipping is expensive from Europe to the US - 120 euros. However, EU VAT taxes are automatically deducted from the price of the bread maker (apprx. 50 euros deduction).
The warranty policy is the same as in Europe (2 years), but shipping would be expensive to send it back if any service was needed.
You would need a "Step-up power transformer" which converts 110
volt North American power to 220/230 volt European power. These have
North American power outlets built in so you would use the EU cable.
The bread machine is 810 watts, and it's usualy recommended to get a
transformer that has 50% more capacity (1500 watts is even better). These transformers look

It's possible you already have a 220 volt outlet in your house.
Many large appliances in North America like washing machines operate
on 220 volt power. You'd recognize it by the sort of rounded shape
of the plug. In this case you'd just need a cheap plug adaptor that
plugs into the outlet and has holes for the EU plug.
But again, it is a lot of hoops to jump through :)

Thank you for your interest in our bread machine. Unfortunately it is only designed to operate at European voltages (230 volt 60 Hz.) We have some customers from the states using them with a step-up transformer (which converts 230 volts to 110 volts), but it needs to be pretty heavy-duty (we recommend one rated for 2000 watts). Also, shipping to the states from Europe would be pretty pricey.
We do have a next-generation machine in the works that we hope will be availble next year. It will feature dual-voltage for USA compatability.

If it is the stainless steel pan, that is not normal as there should be nothing there. If it is the teflon (dark) pan, there should be a recessed circular opening with a white gasketset inside. It should be level with the bottom of the pan (filling the circular hole around the kneading posts) and acts as a gasket to prevent any liquid from dripping down the posts.

We don't have a store in Australia, as our focus in on EU countries. It is possible to ship to Australia, but the delivery costs tend to be high. However, EU VAT taxes of apprx. 20% are deducted from the product price, so that helps make up for the high shipping cost.

It's definitely possible to use with normal dry yeast. I do it all the time. Simply omit the second rising phase, and make the first rising phase longer (pprox. 25 minutes at 28C).

Panasonic makes good bread machines, but I understand the desire to get away from Teflon. The Sana breadmaker should be able to achieve similar results, as you can program each parameter (multiple phases of time, temperature, rising, kneading speed, etc.) It usually takes a few tries to achieve the best results, and as you know a lot depends on the flour and yeast. It's much easier to get light and fluffy results with white flour. Most of the loaves I make are from whole flour and tend to be much denser and more solid, although I made some cinnamon raisin bread with white flour and it was pretty fluffy.
It is only compatible with European 230V systems. We are working on a 110V version for North America and hope to have it ready before the end of the year.

It operates on 220-230V, but is available only with a standard EU F-plug, so your would need a plug adapter. There are three models: basic, standard, and exclusive. The basic comes with a teflon pan, and the standard and exclusive models come with the stainless steel pan.

The pan is made from 304 stainless steel (18/8). It is BPA free and has no coatings like PFOA. (This is referring to the "standard" and "exclusive"models which come with the stainless steel pan).
Because it uses glass lids on the pan, it bakes at a lower temperature and retains more moisture, which allows the stainless steel pan to be used without sticking.

We require it to maintain very precise and accurate temperatures, while converting from its current 220 volt form to a 110 volt version. Past prototypes weren't accurate enough, but the engineers think they have solved it. We'll have an update on our Facebook page (sanaproducts) when it's ready, but we're keeping our fingers crossed for a summer release.
It could be possible to use with a high quality voltage converter, but we haven't tested that yet.

We don't have an official distributor in Australia as we focus on Europe. However, since Australia uses 230V 50Hz power, it would work fine there as long as you have a European to Australia plug adapter. Shipping would be expensive to Australia, but this would be partially reduced because European VAT taxes would automatically be deducted. If you put in your address and breadmaker in the shopping cart, a price including shipping will be automatically quoted.

It will store it for you there as a preset program. Typically a gluten-free cycle omits the second rise, so you would just program the mix cycle time (approx 5 minutes), rise time and temperature, and bake time and temperature according to your recipe.

You're trying combinations we've never tried, so I can only give you some general guidelines.
In your first scenario, I assume you mean "buckwheat" when you say barley a second time (based on your original question). With these four flours, you will have almost no gluten. Barley contains gluten, so it should help the bread to rise a bit. You would omit a second rise time for this. I would try the following settings, then adjust them based on your results:
Knead 1: Power 3, Time 5 minutes (then remove paddles)
Rise 1: 2 hours, 30 C
Knead 2: Off
Rise 2: Off
Bake 1: 1:40 150C (with glass lids)
Bake 2: 20 min. 180C (to create a brown crust)
*Since there is almost no gluten, this will be a denser, more "cake-like" flatter bread
Scenario 2 (with wheat flour)
*Use the same settings, except
Rise 2: 2 hours 35C
In your third scenario, use program 1 (pre-programmed in the machine) for the wheat flour. Use the "Scenario 1" from above for the others, but remember that, except for the barley, you will have a very flat and dense result.
If you add a gluten-free binding agent like guar gum or xantham gum, you may get more bread-like results.
Please let us know your results. You may need to post on some gluten-free baking forums to find the most accurate information for these combinations.
What you're really talking about here (flour and water only - no leavening) are crackers like matzo or flatbread (as you said roti). Normally these types of recipes are made on a grill or a very hot (200C+) oven on a large baking stone. These aren't really suited for a bread machine, due to the limited size of a bread pan. Since you want to eliminate the high temperatures, probably a dehydrator would be the best way to do it (low temperature over 8-12 hours). However, the Sana Smart Bread Maker is fully programmable, so you can take a recipe for something like this from a dehydrator and program in the time and temperature parameters - you can find many flatbread/cracker dehydrator recipes online. For the chapatis, you won't get anything like the results you would get from a grill, since they are basically fried. I would suggest adding a bit of olive oil to the dough, and starting with about 200 ml of warm water and increasing it according to the consistency. The gluten-free flours you mentioned will be less "sticky" than the wheat flour.

I'm sorry to hear you are having difficulty getting good results. Being able to program all the times and temperatures of the different cycles (mix, rise, bake) is a two-edged sword. It gives ultimate flexibility for "power users", but it can be complex too. We have a video online with a basic recipe. Please note that in this recipe fresh ground flour is used as well as homemade yeast, but it works the same with a good-quality store-bought whole wheat flour. Also note that the rise time is different for dry yeast - it is noted in the video (rise 1 set to 45 minutes, 28 degrees, rise 2 omitted). You are right. Transformers are generally unreliable if you want to keep precise temperatures.
We are making a limited run of Smart Bread Makers configured for North American voltage (110 volts). We expect them to be available in November. We don't yet have a US distributor so we will probably ship the first batch directly from Europe so shipping costs will be higher.
