An unanswered question

Look on bread machine forums, or comments on the product pages of online retailers like Amazon, and you will often see people asking why there aren’t any bread machines with stainless steel pans. Why is this? Well, all bread machines come with non-stick baking pans, usually coated with polytetrafluoroethylene (PTFE). PTFE has been in use since the 1940’s and is best known by the brand name Teflon. This coating makes it easy to remove bread after it has had been baked, and simplifies cleaning of the pan. It has been the standard for bread machines for over half a century.

But is it safe?

Studies have been conducted on PTFE showing that if it is heated beyond 260C, it releases a toxic byproduct gas called perfluorooctanoic acid (PFOA). PFOA is a carcinogen which can lead to several types of cancer. PTFE non-stick coatings are most susceptible to creating PFOA gas when uses on the stove top at high temperatures, especially if a pan is left unattended without any contents over heat. They are considered safe in bread machines provided the temperature does not exceed 260C. Nevertheless, many consumers have requested a bread machine to be produced with an alternative to Teflon.

The first stainless steel baking pan

Sana Products, a European company which makes a line of specialized premium kitchen appliances, now offers the Sana Smart Bread Maker. Because it has a maximum temperature of 230C, and a normal baking temperature of 150C-180C, Teflon is safe to use in the Sana Smart Bread Maker and is included in the “Basic” model. However, in response to consumer demand, the “Standard” and “Exclusive” model come with a stainless steel baking pan and kneaders. It has been engineered to be non-stick even without greasing. This is due to the material itself and the fact that the Smart Bread Maker operates at lower baking temperatures than most machines. The stainless steel baking pan also comes with glass lids which allow more even baking results and lower temperatures. It also produces a moister loaf of bread. So far the Sana Smart Bread Maker is available only in Europe, but a North American version is in development.
